Holiday Turkey Salad

Ingredients

  • 1 cup raw Lowell Farms Brown Jasmine Rice, cooked
  • 2 cups coarsely chopped cooked turkey
  • 1 8 oz can pineapple chunks, drain and reserve juice
  • 1 8 oz can sliced water chestnuts, drained
  • 1 medium unpeeled apple, cored & chopped
  • 1/3 cup chopped macadamia nuts
  • 1/2 tsp. salt
  • 1/2 cup plain yogurt
  • lettuce leaves
  • 1/4 cup shredded coconut, toasted
Directions

Cook Brown Jasmine Rice according to directions on package. Combine cooked rice with turkey, pineapple, water chestnuts, apple, nuts, and salt. Toss lightly with yogurt and 1 tblsp. pineapple juice. Serve on lettuce leaves. Garnish with toasted coconut.

Makes 6 servings.

*Chicken may be substituted for the turkey.
