Garlic Ginger Coconut Jasmine

Ingredients
  • 2 cups raw Lowell Farms Jasmine Rice (white)
  • 2 Tbl. Oil
  • 4 cloves garlic, crushed
  • 1 Tbl. fresh Ginger, grated
  • 1/4 Cup Lite Coconut Milk
  • 2 1/2 Cups water
  • Salt to taste
Directions

In saucepan over medium heat, sauté oil, garlic and ginger briefly. Add rice and stir well. Add Coconut Milk, water and salt. Bring to boil.

Give a quick stir, cover, reduce heat to low. Cook 15 minutes. Remove from heat and let sit covered five minutes more. Fluff with fork and enjoy.

Serves 4.
